The recipe for... Tomorrow's flavours details: speakers, location and date, partners and funding

What will it taste like tomorrow? Even today, the issue of food additives, excess sugar or other undesirable ingredients means that our food choices often end with a long analysis of the ingredients on the label. So what about food produced in a lab or with a 3D printer as a healthy and sustainable answer? This is one of the topics we will discuss on 14 March from 18:30 during the adult event The recipe for... Tomorrow's flavours!

The recipe for... is a new evening format consisting of two lectures interspersed with live cooking or workshops. For the first edition, we have invited experts from LabFarm - a Polish start-up that grows real meat in a laboratory, Radosław Smolik - a specialist in evidence-based nutrition, and the culinary geniuses of the White Rabbit Restaurant.

The White Rabbit Restaurant will present two editions of culinary demonstrations combined with tastings. In the first, Marcin Popielarz of the White Rabbit and Hewelke Restaurant will bake Nordic bread with vegan brown butter (beurre noisette) and Polish eggplant in the style of Japanese unagi eel. In the second entry, you'll see how it's cooked and also taste 'fish' made from banana flowers, 3D printed 'steak' with truffle sauce and cheesecake made from fermented almonds. Marcin will also prepare a surprise quiz.

Radosław Smolik (Fact-based Dietetics) will talk about how to read food ingredients, what to look for and what to avoid. He will also talk about hidden sugars, trans fats, food additives, GMOs and labelling myths. During the session you will learn how to decipher ingredients to make informed choices about what is on your plate.

Stanisław Łoboziak (LabFarm) - Pure meat, cell-based meat, cultured meat - these are all terms used to describe meat grown in a laboratory without the use of animals. What does the whole production process look like? How is it possible to grow animal cells in bioreactors? Will this technology be able to meet the world's food needs? And what kind of dishes can we make with such meat?

You can find more details on the Experyment website (in Polish).

The recipe for... Tomorrow's flavours! is part of the programme of events accompanying the 'CLEVERFOOD for everyone' exhibition.
